      Lubricate the carcass with a small amount of vegetable oil - this is conveniently done with a brush. Put the sturgeon in the oven and bake until fully cooked. Just remember to be careful not to overdry the fish.

      Put the finished sturgeon on a beautiful serving dish and garnish with thin lemon slices, fresh parsley sprigs and a couple of mint leaves. The sturgeon should only be cut with a very sharp knife and served with your favorite fish sauce or with the juice that was released when the sturgeon was fried. The recipe is complex, but worth it.
