A simple recipe for shortbread pie with cherries in the oven

First of all, you need to prepare shortcrust pastry: Sift the flour into a deep bowl and combine the baking powder together with sugar in it. Beat one egg, add fresh sour cream and chilled butter. Knead the dough, divide into 2 parts and wrap them separately in cling film. Transfer to the freezer to chill one side and freeze the other slightly.

Lay parchment paper on the bottom of a round shape, roll out the chilled shortbread dough and place on top of the paper, forming sides about 2 cm high.

Remove the seeds from the berries, sprinkle with starch and stir, and then put them on the dough.

Ingredients:

  • Flour - 250 g.
  • Butter - 90 g.

  • Sugar - 50 g.
  • Baking powder - 1 tsp
  • Salt - ¼ tsp
  • Cherry - 300-400 g.
  • Starch - 1 tbsp.
  • Sugar - 2 tbsp

In order to prepare shortbread dough, you need to mix flour with baking powder, add salt and sugar. Cut the chilled butter into small cubes with a knife and grind the butter with flour into small crumbs with your hands. Beat in the egg and quickly knead the dough. Ingredients:

  • Flour - 200 g.
  • Butter - 100 g.
  • Egg - 1 pc.
  • Sugar - 100 g.

  • Vanillin on a knife blade
  • Baking powder - 0.5 tsp
  • Cherry - 400 g.
  • Starch - 1 tbsp.
  • Thick sour cream - 150 g.
  • Powdered sugar - 1/3 cup
  • Vanillin - ¼ tsp

Cut butter at room temperature into pieces, add sugar, salt, vanillin and baking powder. Carefully rub the mixture with a spoon until smooth. Pour the lightly beaten egg into the butter mixture, mix well again. Sift the flour and add to the dough. Knead and shape the dough into a ball. Wrap in cling film and leave in the refrigerator for 20-30 minutes.

While the cake is in the oven, prepare the sour cream. To do this, add icing sugar and vanillin to sour cream. Mix lightly with a fork or whisk. Do not beat with a mixer, otherwise the cream will be too liquid. Take the hot cake out of the oven and fill it with cream. Smooth out the filling with a spatula. When the cake has cooled, we send it to the refrigerator for 2-3 hours so that the cream thickens and the cake is soaked properly.

Ingredients:

  • Butter - 150 g.
  • Sugar - ½ cup
  • Egg - 1 pc.
  • Flour - 2 cups
  • Vanilla sugar -1 tsp
  • Baking powder - 1 tsp
  • Salt - a pinch
  • Cottage cheese 9% fat - 300 g.
  • Sour cream 20% - 150 g.
  • Sugar - ½ cup
  • Egg - 1 pc.
  • Cherry - 1 cup

Ingredients:

  • Flour - 230 g.
  • Butter - 150 g.
  • Salt - 1/2 tsp
  • Cherry - 300-350 g.
  • Gelatin - 12 g.
  • Sugar - 1-2 tbsp.
  • Eggs - 3 pcs.
  • Milk - 300 ml.
  • Vanilla sugar - 10 gr.
  • Corn starch - 40 gr.
  • Butter - 40 gr.

Let's start by making the jelly because it needs time to set a little. To do this, defrost the cherry, decante the resulting juice, and add water. The total volume of liquid should be 150 ml. Pour sugar and bring everything to a boil. Remove syrup from heat, add gelatin and stir until gelatin is completely dissolved. Cool and put in the refrigerator.
We're doing a test. Grind flour with salt and butter, knead shortbread dough. Wrap in cling film and let it cool in the refrigerator.

Then we roll out the dough, about 3 mm thick. And we shift it into a mold, forming a side about 3 cm. We pierce the dough with a fork and put some kind of load on top. For example, foil or parchment with beans or peas. This is necessary so that the cake does not deform during baking. Bake in an oven preheated to 200 degrees for about 15 minutes. Then we remove the load and bake for another 10 minutes. Let the crust cool down.

Now we cook from eggs, milk, sugar, vanilla sugar and starch custard. Stir the butter into the hot cream. We spread the finished cream on the cake, level it. We spread the cherry in the cream, and pour the barely set jelly on top. If the jelly did not have time to grab, then send it to the freezer for a while.
We leave the cake in the refrigerator overnight so that all the layers are completely frozen.

Cherry shortbread pie "From Grandma Emma"

Ingredients:

  • Butter - 150 g.
  • Sugar - 2 tbsp.
  • Salt - 1/2 tsp
  • Vanilla sugar - 1 tsp
  • Eggs - 1 pc.
  • Sour cream - 100 gr.
  • Flour - 300 gr.
  • Baking powder - ½ tsp
  • Cherry - 750 g.
  • Gelatin - 12 g.
  • Sugar - 150 g.
  • Vanilla sugar - 1 tsp
  • Breadcrumbs - 40 gr.
  • Yolk - 1 pc.

From the indicated ingredients, knead the usual shortcrust pastry. This can be done with a mixer or by hand. We wrap the finished dough in a film and send it to cool for 2 hours.

Mix peeled cherries with sugar. Drain off excess juice. Divide chilled dough in half. We evenly distribute the first part along the bottom of the mold, forming the bottom of the pie. We again divide the second half and form sides from one part. Sprinkle the bottom of the cake with breadcrumbs. Lay cherries on top. From the remaining dough we make strips and cover the top of the cake with a lattice of dough. Lubricate the pie with egg yolk for a delicious crust. Bake in an oven preheated to 180 degrees for about 45-50 minutes. Remove the finished cake and let cool.

Soften the butter a little, leaving for 30-40 minutes at room temperature, then grind with regular sugar. Add vanilla sugar, then add eggs and beat until foamy. Mix flour with baking powder and lemon zest, combine butter and flour mixture, mix thoroughly.

Put the dough on a baking sheet covered with parchment, form the sides. Arrange washed and pitted cherries on top. Grate the frozen butter, or grind it in a blender, mix with nuts, sugar and flour, then pour the cherry with the resulting mixture. Place the dish in a preheated oven, and bake for 40 minutes until fully cooked, at a temperature of 180º.

This shortcrust pastry cherry pie will appeal to all sweet lovers. Together with cherries, any berries can be used as a filling, and whipped cream, butter cream are suitable for pouring. Dessert is easy to prepare, does not require special expenses. The combination of ordinary shortcrust pastry with sweet and tart cherries allows you to create a fragrant cake.

Ingredients:

  • chicken egg - 2 pcs.;
  • flour - 300 gr.;
  • butter - 150 gr.;
  • vanillin - 5 grams;
  • sugar - 200 gr. (for the filling 5 tablespoons);
  • two teaspoons of baking powder;
  • frozen cherries - 500 gr.

Using a fork, grind the softened butter with sugar and eggs, then add the baking powder, flour and vanillin to the mixture. Knead the dough with a spoon or silicone spatula, then put it in a greased form and place in the freezer for 10-15 minutes, so that it freezes slightly.

Remove the dough from the refrigerator, put pre-thawed pitted cherries on it, sprinkle generously with sugar. Place in the oven and bake at 180º for 45-50 minutes.

The finished dish will have a great cherry flavor, you can decorate it with whipped cream or curd cream on top. Remember that after defrosting, all excess liquid from the berries must be drained, otherwise the cake may lose its shape.

And someone is crazy about pies. Here I just relate to the latter: it seems to me that pies are the most wonderful dessert. I especially like pies with berries, when there is very little dough, and the prevailing amount of fillings. This is exactly what baking turns out to be if it is based on shortbread dough: crumbly, light, completely unobtrusive. Another plus of such a test is that it is prepared from very affordable products and quickly enough. And you know, in my practice it has never happened that shortcrust pastry did not work out, because it is almost impossible to spoil it. As you already understood, I often cook shortbread pies with berries, especially in season. But it turns out very tasty with frozen berries, which are perfectly stored all winter in the freezer. As an example, I will introduce you to one of my favorite photo recipes - shortbread pie with cherries. The pleasant sourness of the berries goes well with the tender dough, and together they create a very successful flavor composition.

Ingredients:
for the test:
- 300 gr flour;
- 40 grams of sugar;
- 130 gr of butter;
- 2 tablespoons cold water;

For filling:
- 300 gr pitted cherries;
- 50 grams of sugar;
- 2 tablespoons starch.

Sift the flour and pour into a container in which we will then form the dough. The container should be tall enough to comfortably mix the ingredients.





We need butter at room temperature, so you should get it out of the refrigerator in advance. If you have not done this, and time is running out and it's time to work on the dough for the pie, you can heat the oil in the microwave. But do not overdo it - the butter should not melt, it only needs to heat up.





Add butter to flour.





We send sugar there.







And now we need to mix flour, butter and sugar. This can be done in two ways. The first one is just hands. Yes, yes, you read everything correctly, with your hands. This is quite quick and not difficult at all (provided that you still brought the oil to room temperature). The second way is to use a mixer for mixing. It will turn out even faster, but you will have to wash the beaters. So choose the method that suits you best. In both the first and second cases, you should end up with fat crumbs.





We put aside 4-5 tablespoons in a separate container. spoons of these very crumbs, we will need them later, to decorate the pie. And from the remaining bulk, we will make the dough.





Add water to dough crumbs.





And quickly begin to knead the dough. Here the mixer will not help us - you have to work with your hands. But do not be discouraged - pretty quickly you will have ready-made dough in your palms.







The dough will be quite crumbly, but still ready to be further formed into a pie base.





We spread the dough in a round shape and spread it with our hands along the bottom so that the dough lays in an even layer. Do not forget that it is necessary to form sides from the same dough, about 2 cm high.





We cover the form with the dough with a plastic bag or cling film and send it to the refrigerator for 30 minutes.





Then we take out the dough and prick with a fork - so that the dough does not rise in bubbles in the oven.





We clean the cherries from the stones and let the juice drain. Put the cherries in a deep bowl.





Add sugar and starch to the cherry.





Mix well.





We send the dough to the oven, heated to 220 degrees, for 7 minutes. During this time, it will change its appearance a little, but, of course, it will not be completely ready yet.





We spread the cherries in a form, level them so that they lie evenly.





Pour greasy crumbs on top of the cherries, which we set aside before adding water to the dough.





And we send the form with the dough into the oven, which, as you remember, is heated to 220 degrees. Baking time for the cake is 25-30 minutes. The top should be browned, and the dough should be completely cooked. The filling will remain liquid at this point, but don't worry, this is only as long as the cake is hot. When it cools, the filling will harden.





We take out the form with the pie from the oven, cool for 5-10 minutes, and then take the pie out of the form and cool to room temperature.
