Take cream - the fattier it is, the thicker the sour cream will end up, but do not forget that the fat content of cream affects the calorie content of sour cream. To get a very “light” sour cream, take milk with a low fat content, but then the sour cream will not be very thick.

Heat the cream to 40 degrees and pour into a sterilized container, where then add regular sour cream (it will act as a starter) at the rate of 2 tablespoons of sour cream per 1 glass of cream. Close the container, wrap it in a blanket and do not touch it for 8-9 hours. After this, the container must be moved to the refrigerator so that the sour cream thickens. After a few hours, “sweep” (remove) the top layer - sour cream. At the bottom you will have yogurt, which you can use to make very tasty and fluffy pancakes.

You can increase the thickness of sour cream by adding a little diluted gelatin and citric acid to the original cream.

Of course, home production of this product may seem complicated, but you can regulate the thickness and fat content yourself, and also be sure that your sour cream does not contain chemical elements which may harm your health.
