How to choose ingredients

Meat. To make goulash really tasty, you need to choose the right part of the meat. And for this dish, the lower part of the butt, shoulder blade, knuckle, and lower part of the thigh are best suited.

The meat must be fresh and of high quality, so when buying, pay attention to:

  • Color. It should be rich red, but not dark, otherwise it is the meat of an old animal, and the finished dish from it will be tough.
  • surface and structure. It is allowed that fresh meat is slightly weathered, but not much - such a product is already stale. It also shouldn't be too wet. The meat should be elastic and not fall apart.
  • Smell of a fresh product milky, pleasant and without foreign aromas. If it is sour and unpleasant, such meat is stale and not worth buying.
  • If you buy frozen beef, it must have uniform color. Meat from one cow cannot be different in color. Also, there should not be a lot of ice, otherwise this product has been frozen repeatedly.

  • Experienced chefs recommend frying veal slices in butter or cracklings and assure that this way the dish turns out to be more fragrant and juicy.

Before you get to work and cook beef goulash in a slow cooker, you should know some of the subtleties in handling the ingredients. So, it is very important to choose the right meat and cook it correctly. Beef is traditionally used for goulash, but modern housewives like to dream up, and you can often find analogues from chicken or pork.

  1. Roll the meat pieces in wheat flour before lowering them into the multicooker bowl.
  2. If you come across old or tough beef (other meat), then extend the cooking time of goulash in the "Stew" mode to 80-90 minutes.
  3. To evenly fry vegetables and meat, stir them at least three times during cooking.

  6. To make goulash even tastier and healthier, replace the tomato paste with fresh tomatoes, chopped in a blender or grated. You can also remove the skin and cut the flesh into small cubes.
  7. If you want to add a touch of Italian sophistication to the dish, pour a glass of dry white wine into the bowl 40 minutes before the end of cooking.

Goulash was invented by Hungarian shepherds who cooked their own food, without leaving the herd, on a fire. The dish turned out to be very satisfying and quite simple to prepare, but in order to save meat and get more strength, pieces of potatoes were often added to goulash. Thus, the shepherds "killed two birds with one stone" - they made both a meat dish and a side dish for it.

In our recipe for cooking goulash in a slow cooker, we will use only beef, but we will prepare three options for delicious meat with gravy: beef goulash with carrots, goulash with fresh tomatoes and goulash with sour cream and vegetables.

(we use a Panasonic multicooker, if you cook goulash in a multicooker - a pressure cooker, it will take much less time to cook meat)

The first recipe for beef goulash with gravy is presented by our reader Olga, and then I will give an example of how this beef stew in sauce can be varied.

Ingredients:

  • Beef - 700 grams,
  • Onion - 1 piece,
  • Carrot - 1 piece,
  • Flour - 2 tablespoons,
  • Salt - to taste
  • Black pepper, ground - to taste
  • Water.

For a side dish for beef goulash, crushed meat (), vegetables, pasta, rice is perfect.

Beef goulash in tomato and vegetable sauce

(in Panasonic multicooker)

Beef Goulash Ingredients:

  • Beef - 900 g,
  • Onion - 1 large head or several small ones,
  • Carrots - 1 piece,
  • Fresh tomatoes - 4-5 pieces,
  • Bulgarian pepper - 1 piece (today it was not at hand),
  • Salt,
  • Pepper,
  • Bay leaf,
  • A little water (or completely replace the water and tomatoes with tomato juice),
  • Flour - 2 tablespoons.

How to cook goulash with vegetables

Pieces of beef are laid out in the slow cooker, which was switched to the “baking” mode, the time was automatically set for 40 minutes. I do not close the lid in this mode.
I don't use fat or oil at all.
At the same time, I finely chop the onion and rub the carrots on a grater. I send the vegetables to the slow cooker to the meat and mix. I continue to cook until the signal.

I rub fresh tomatoes on a coarse grater. I cut them into 2 pieces. So the peel remains in your hand, and the juice in the plate.

After the multicooker signal, I add tomatoes, salt, pepper, bay leaf and a little water to the vegetables. Then I cook meat goulash on the “Stew” program for 2 hours.

Separately, in a dry frying pan, I fry a few tablespoons of flour, add the broth to it, which I take from the stew in the slow cooker, and mix until smooth.

I fill the beef goulash with the resulting sauce, mix and keep the slow cooker in the “baking” mode for 5 minutes so that it thickens.

Beef goulash with sour cream in a slow cooker

In this recipe, it is better to take sour cream for goulash with fat, ideally even thickened heavy cream, then the sauce will not delaminate into flakes, as in my photo. But it does not affect the taste, believe me! Beef goulash with sour cream is tasty and tender.

To prepare goulash with sour cream you will need:

  • Beef (or any other meat) - 800 g,
  • Onion - 1 head,
  • Carrots - 1 piece,
  • Bulgarian pepper and tomatoes - optional, it will only taste better,
  • Sour cream - 1 glass,
  • Salt,
  • Ground black pepper,
  • Spices, I use dried Provence herbs,
  • Bay leaf optional.

How to cook beef goulash with sour cream

The method of preparing beef goulash with sour cream in a slow cooker is the same as in the recipes described above. Beef is fried on “baking” with vegetables, and then stewed for 1.5-2 hours. The only difference is that not liquid is added to the meat, but sour cream.

In the presented step by step photo In the recipe, I did cook “lazy” goulash, without first frying the meat.
I just put onions, carrots, sour cream on pieces of beef. I added spices on top and smeared the vegetables with the top layer of sour cream.
I switched the multicooker to the "Extinguishing" mode for 2 hours.

After the multicooker signal, the goulash needs to be mixed, it seemed thick enough to me, so I did not add flour to the sauce for the stew.
Beef goulash can be served with boiled pasta.
