Cucumber salad- appetizer salad with original preparation. The dish belongs to Chinese cuisine. Cucumbers are very tasty, spicy and unusual. Great to serve this dish with rice, boiled potatoes. Ingredients

To prepare a salad of beaten cucumbers you will need:

garlic - 2 cloves;

young cucumbers - 4 pcs.;

chili pepper - 1/4 pc.;

coarse salt - 0.5 tsp;

sugar - 0.5 tsp;

coriander, freshly ground black pepper, paprika - 1/4 tsp each;

rice vinegar (or any - 6%) - 1-2 tbsp. l.;

soy sauce - 2 tbsp. l.;

sesame oil (or any refined) - 1 tbsp. l.;

roasted peanuts (or sesame) - 2 tbsp. l.

To prepare broken cucumbers, we take large fruits, with juicy pulp, in which seeds have already formed. Cucumbers should be washed. Then cut them in half lengthwise with a sharp knife.

Extract the pulp from the resulting cucumber boats. It is convenient to do this with a coffee or teaspoon, walking along the border of the cucumber pulp with its walls. Next, using the same spoon, remove the pulp. This is how the finished boats for cooking broken cucumbers should look like.

Place the cucumbers on a cutting board with the back side up. Now the most interesting procedure - we will beat them. In many recipes for broken cucumbers that I have come across on the net, it is recommended to beat them off with the tip of a wide knife placed parallel to the cucumbers. Tried - not convenient. We will need:

  • Vinegar (9%): 20-30 ml;
  • Vegetable oil - 50 ml;

How to cook:

1. Cucumbers are washed and cut off the tips.

2. A knife blade is laid flat on each cucumber and beaten at half strength. The cucumber should burst, but not shatter into small fragments.

3. After that, the cucumbers are cut into pieces 3-4 cm in size.

3. Grate the carrots. To do this, you need a special grater, one on which vegetables are rubbed for Korean salads. If it is not there, then the carrots are cut with a knife into the thinnest straw possible. The onion is finely chopped. Instead of onions or along with them, you can take a few sprigs of cilantro if there are lovers of this spicy herb in the family.

4. Do the same with garlic as with cucumbers. Press the peeled cloves with a knife and cut into pieces.

5. Prepare dressing from oil, spices, vinegar, sugar and soy.

6. Transfer the vegetables to a bowl and pour over the dressing. Salt is added if necessary. Leave the cucumber salad for about one hour.

Wash cucumbers well under cold water, dry and cut off the tips on both sides. Cut in half lengthwise.





Then, using a teaspoon with a sharp spout, cut out the inside of the cucumber, select the pulp with seeds. We leave a little near the peel, about 1-1.5 cm on each side. We discard the cut-out pulp, we will not need it (or we use it in other salads, in okroshka).





Turn the cucumber boats cut side down. We cover with a plastic bag and hit the handle of the knife several times so that the cucumbers become softer and give more juice. We cut the broken cucumbers into half rings 0.5-1 cm thick.





Transfer to a deep bowl. Sprinkle cucumber slices with rice vinegar, salt, season with a pinch of sugar. Leave for a few minutes for the salt and sugar to dissolve. Add soy sauce.







Thoroughly mix the cucumber salad. Cover, put in the refrigerator for at least an hour. Stir several times so that the cucumbers evenly absorb the marinade.





Shortly before serving, add finely chopped garlic, chopped cilantro or parsley to the cucumber salad. Season with hot pepper, cut into small cubes, or add a couple of pinches of chili powder. We mix everything.





Drain off excess marinade. We dress the salad with vegetable oil. We taste, adjust if necessary. At this stage, you can add sesame seeds by drying them in a dry frying pan until golden brown.
